What is Diabetes?
“Diabetes is a disease in which your blood glucose, or blood sugar, levels are too high. Glucose comes from the foods you eat. Insulin is a hormone that helps the glucose get into your cells to give them energy. With type 2 diabetes, the more common type, your body does not make or use insulin well. Without enough insulin, the glucose stays in your blood.
Over time, having too much glucose in your blood can cause serious problems. It can damage your eyes, kidneys, and nerves. Diabetes can also cause heart disease, stroke and even the need to remove a limb.”

More Red Meat = More Diabetes
"The Boston Globe Magazine featured a profile of Harvard professor Walter Willett, calling him the “world’s most influential nutritionist... According to the study, conducted by Willett and his colleagues at the Harvard School of Public Health, participants who ate at least a half serving more red meat over a four-year period were 48 percent more likely to develop Type 2 diabetes in the following four years. Conversely, those who lowered their meat consumption by more than half a serving per day decreased their diabetes risk. The research was published in the Journal of the American Medical Association.”

Processed Cows Milk Linked to Diabetes
We all grew up with the classical food pyramid, consuming all the proper servings of grains, dairy, and meat. Well, what if you found out that one of the main levels of the food pyramid actually could give you diabetes? Studies have indeed shown that our bodies, when reacting to A1 beta-casein in dairy, cause a diabetes-like response.

If White Rice is Linked to Diabetes, What About China?
"Basically, the question is if the modern diabetes epidemic in China and Japan has been linked to white rice consumption, how can we reconcile that with low diabetes rates just a few decades ago when they ate even more rice? Protein consumption can exacerbate the insulin spike from high glycemic foods."
